It really depends on the person. The restaurant I work for attracts a much older and conservative crowd so sometimes it it just like you described. Tipping culture in America is weird. Often the customer demands that the server bend over backwards for them in exchange for a livable wage. Thankfully it's not always like that but it can get stressful sometimes when being able to make a car insurance payment is literally at the mercy of some stranger.
