A professional atheist would continue having a lack of a belief in gods and assumably be paid handsomely for this lack of belief.

What about a secular celebrant who organises atheist/secular hatchings/matchings/despatching? As atheism becomes less of a curse there should be a growing market for this sort of service.

If you are looking to change the world, be it atheist or not then Law, Politics, Marketing would be a good choice.
Sociology might not be a bad idea (though, unless you want to become a professor or do some kind of grad work, it's not exactly swimming in job offers).
One of my favourite Sociology profs once announced to our class that no good academic is religious. That went over... interestingly.
