Happy Thanksgiving Everyone, albeit belatedly. ::)

We had a very, very enjoyable Thanksgiving this year at our house, and I must say the food and drink was excellent. My daughter's boyfriend and I cooked the turkey together, and then he made an outstanding herb infused gravy which was simply outstanding. He and I also served up baked potatoes which turned out quite well, these were finished off with a locally sourced goat butter...the potatoes skins themselves were soft, but crispy lightly seasoned with salt and cracked pepper. I made a cauliflower dressing which turned out quite well, and my wife baked this large pan of delicious cornbread with jalapeno peppers which were incredible....these disappeared from the table quickly so I had to grab a piece, and then hide it in the refrigerator when no one was looking so I could enjoy it the next day (I have no shame)
A family friend brought an outstanding, and incredibly delicious green bean casserole she made which was out of this world. Everything in the casserole was made from scratch, including the mushroom soup, and her own gluten free, French Fried onions.
My daughter made two fresh, homemade pies. One apple, and one pecan, and these were both simply amazingly good...I caught her brother in the kitchen later that night about 1:30pm as I was headed to bed finishing off the remaining pecan pie. As I whispered good night to him, he looked up at me, smiled and raised his spoon laden with pie in my direction.
My daughter's boyfriend also treated us with homemade mulled cider that he had prepared very early that morning. We drank it cold mixed with sparkling water.

Yesterday evening we all got back together, as I had made a green chili soup with the leftover turkey from Thanksgiving. I made the soup stock on Friday with the remains of the turkey carcass, just simmered all day it along with a ton of veggies. I used a combination of green peppers in the soup, which consisted of poblano, bell, Hungarian, Anaheim and chilaca. The wife made some more cornbread with jalapenos to accompany the soup. I also made some smoked Quinoa infused with garlic.

All in all it was a very enjoyable holiday, and long relaxing weekend...I also finished up all of my outdoor fall and winterizing chores this weekend; plus I put up the Christmas tree, and all my outdoor lights and decorations.
