is there a what's for dinnerthread?

tonight is fried plantains

scored some plantains a week or two ago at the grocery, today they were so black and shriveled that i said maybe i waited too long

not so!

they were perfect. i told my number two5o daughter to eat them now because plantains don't keep, but she said to put in th erefrigerator and she would eat them later.

they won't last. it's almost sundown and the teenage boys will wake up soon. that will be th eend of them
i am all plantained out

In my situation I just have to imagine what is flowing into my stomach. Tonight is barbecue ribs, a baked potato with all the trimmings, corn on the cob with lots of butter, a tossed salad, and a Guinness to wash it all down.

Braised chicken "tenderloins" (some kind of parts of breasts, I'm guessing) from CostCo, and a vegetable mix zorched in the microwave. Satisfactory as gut-fill.

i got soba for christmas

so when i got home i chpped up some garlic and ginger and thai chilis and braised them in a little olive oil

then i threw some of the soba into water and boiled it

excelent

tomorrow i'll chop some green onions and make some soba with some horseradish

no wasabi in appalachia

I'll have to look up soba. I've never heard of it before now. I may not be able to eat but that hasn't curbed my culinary inquisition.

Love fried plantains, haven't had them in years.  Really must find a local restaurant who does them and order some, they must be somewhere close by -- this is an international city, after all!

In the meantime, I'm finishing up the leftovers from my New Year's feast of Chinese noodles with assorted veg.

for breakfast on my day off

pour some olive oil in cast iron pan on medium heat let it get hot

throw in some chopped raw almonds

four five medium mushrooms sliced

let sit a minute

add half a green pepper chpped

a buch of rainbow chaard chopped

spread the chard over everythoing and weight it all down wih an undersize heavy iron lid

three or four minutes

take it all out and toss with some coarse sea salt and lime juice

takes less time to make than th ecoffee thats brewing at the same tuime

when the coffee cup is empty open a corona

sandra, you can do it at the house. basic ones are easy

buy some plantains and put em up on a shelf until they turn completely black and dry up and you say i'll have to throw those away tomorrow

take em down and slit the skins lengthways on two sides so you can peel them without them coming all apart

right about now put a half or three quarter inch of oil in a pan and start it heating up.

roll th e peeledplantains in wheat flour so you can cutem without them sticking to stuff, then slice

get a mixing bowl and throw in a couple double handfuls of wheat flour

put in a double handful of yellow corn meal

put in some salt, some paprika, some red pepper or chopped dried chilis if you have any

a handful of whit esugar. anything else you might think is interesting from the spice tub

add enough milk to make a thick batter very sticky but not so thick that the plantains come apart when you stir them in

throw in some plaintains and stir em around until theyre covered

by this time the oil is hot so throw th ebattered plantains in and let them brown one side
use a pancake turner underneath to turn them over to brown th eother side. slip the turner underneath to keep th eplatains from sticking to the pan too and you can cut down on th eoil and still get them deep fried

make the oil pretty hot so the bater sears and seals the plaintains up and then they won't absorb th eoil very much

take them out and drain them on a plate with some paper towels while you throw in the next ones.

if yuo have any batter left over make fritters with it

you can do this with bananas too but personally im not a sugar person and so bananas are too sweet for me.

japanese buckwheat noodles. my korean brother in law showed me the city way to do it

get some soba noodles and cook them in boiling water. they cook quickly

take themout and drain them put em in a bowl

squirt in some wasabi paste and some some ginger paste from those tubes of the stuff you can buy sometimes.

eat cold

this is a great summer food

alternatively you can leave them in some of the starchy water and stir in some miso with some chopped green onions

I used to refer Guinness as a meal in a can or bottle. It's heavy.

Some really yummy bread that you can bake at home. Easy to do.  This is a no kneading bread made from stuff you may already have in the kitchen.

One pound all purpose flour
Two teaspoons salt
three quarter teaspoon dry Yeast  (Comes in those cute little packets)
One and a half cups of warm water (aim for about 105 degrees, no hotter than that)

Mix dry ingredients thoroughly
Add the warm water and mix with your hands.....It is messy. 
You will have a sticky mess, shape it into a ball.
Cover the mixing bowl with a kitchen towel or other clean cloth.

Put the bowl aside for 6 to 8 hours.  The yeast will do its thing.
Remove the mess that has probably doubled in size
Fold it over itself four or five times, replace in bowl and cover again.
After about 30 minutes heat the oven to 450F.  Heat your dutch oven in the oven for about 30 minutes more.
it needs to get up to the 450 degree more or less.

Place the ball of dough on a parchment paper and use it as a sling to lower the sticky stuff into the hot dutch oven.
Cover and put into the oven for 30 minutes.  Remove the cover and bake another 15 minutes.

Remove from container and parchment and place on a wire cooling rack. The interior temp of the bread should be about 210.
Let it cool for at least 10 minutes and then take a slice, slather with butter, Yum Yum.........
Damn this is good bread.  It is crusty, tastes great, will probably make you gain weight but it's worth the risk.

Sandy, you may be able to get prepared plantains at your super market.  A popular brand name is Goya. They make plantains easy as they are already fried.  You simply put them in the oven or a frying pan to heat them. No messy hot oil to deal with.  Look for the bright yellow and red package in the freezer section of your market.

Since my food is in a bag that is connected to a pump which is connected to my stomach 24 hours per day my meals don't change. But a lot of times I'll pretend it's something else. Tonight it's three tacos, nachos, and that white cheese with some jalapeno slices, and refried beans.

somebody dropped off three big bags of fresh arugula at work and i snagged one. you cant get that stuff in appalachia in the winter. no idea where it came from

and the lovely wife made egg muffins-- a bit of sausage, onions, carrots, kale, other vegetables, stir it up in a pan and cook the egg in muffin tins. i take three of them with me to work to eat for breakfast, along with the vegetable/tofu stuff i usually eat. not enthusiastic about the meat but i need fat and protein and much of that in plants comes with carbohydrates.

cutting out carbs as much as possible. im at 201 pounds and the target is 185. that will make the leathers loose.

ive got to do serious stretching too. my joints are getting stiff with age and its harder and harder to fold into a racing tuck

I am going to make some Jubilaya in the next day or two. Not the Cajun type but the Creole type. Blackeyed peas, smoked sausage with rice and the Holy Trinity.  The trinity according to the creoles, consist of onion, peppers and celery. Add the Trinity to the ingredient that  they Pope the Pope. The Pope is the ingredient that consists of plenty of Garlic.

Today it's boiled chicken and baked potatoes. I boil the chicken because it's tenderloin pieces from CostCo and has a lot of salt. I've been busy with finishing up the rental house to get it ready for sale, and didn't go to the grocery store, so spuds it was. Now, the toilet that we just set down after the new floor was installed needs to be replaced.  >:(  I told my wife to call a plumber. I'm sick of this crap. I go over there every day to make sure we don't get squatters (it's in LA, it's a real concern) and do a bit here and there.

That arugula looks tasty, billy. Arugula is one of my favorite greens, kind of spicy. Plus it's great b/c it doesn't go bad right away. Husband says it's too bitter. So I get all the arugula to myself. : )

Interestingly, I used to despise arugula for that bitterness. It doesn't seem that way to me, anymore. Taste buds are burned out, I guess.

 i just stuff handfuls of it into my mouth.

its bitter but not that much. i stir fry it into whatever im making- put it in last so it just gets seared a bit

or drop it into soup or pasta or whatever you cook in a pot

put it on egg or onion sandwiches or on quesadillas along with the cheese

but mostly i just stuff it in my mouth like a fool

thee are my 8, 10, and 12-inch pans. ive had various pans over the years but these have stuck with me for twent or tirty, i think. ive had smaller, and theyre too small to get a utensil underneath an egg. much bigger and you have to finess keeping liquid or semisolid stuff in one place. the 10 inch is my go-to pan when im by myself, because its light enough fo me to manipulate with one hand. the twelve is a bit too heavy.

but when im making something for more than me, i go to the 15-inch

this one is to big for anything unless im making curry or cooking something large. or i could use it to stun marauding grizzlies without much assistance. it wa useful when the kids were all at home and i was cooking for seven. at least when they would eat what i made. even now ill put in two chili peppers-- just two-- and someone will bitch.

theres a wok under the cupboard too, but ive found that i can do just about anything with a cast iron pan that i can do with a wok, with more even heating.

We have stainless cookware with aluminum bottoms (outside) for most cooking, and some Miracle Maid stuff my wife bought before we met. The stainless/aluminum cookware we got as a wedding present. My wife also gave me a complete set of Loge cast iron cookware when I was a volunteer leader for the Boy Scouts because I was learning Dutch Oven cooking.

As for dinner, probably fish on the grill. Tomorrow it'll be boneless leg of lamb roasted on a spit.   :let'seat:

I'm what you might call a boring diner. I did, however, find some nice pre-made fried noodles at my local grocery store. Spent Easter testing different combinations of those with heated dead animals.

Well it's yesterday now. But I gave our new kitchen its first full workout with a roast dinner for four. Generally pleased with the result given I had never roasted anything in a fan assisted electric oven before. It cooked a little quicker than I was used to but the large glass front and lighting let me see the lamb shoulder cooking. The potatoes roasted beautifully.

That's unfair, I was only going to ask why you didn't build the possibly wooden parts of your kitchen yourself, small things are nice but, you could have made that kitchen.  You could have cooked that lamb amidst the kitchen you made.

wont change much. just no eggs and no milk. i already avoid the other stuff.

hard to do because i dont have time to cook in the mornings. but ill figure something out

Change of plans. Hamburgers on the grill. I eat red meat about twice a month, but when I do it is usually steak, and maybe 4 ounces. If I have to only eat a little of something I enjoy, it's generally not going to be ground beef. Ah, well, today isn't that day. Looks like we have an English cucumber and a couple heads of romaine lettuce up for slaughter before they go bad. The wife went with me to the store, but managed to miss out on buying a tomato for the burgers. I'm not disappointed; I can't even eat them anyway. We bought buns, which I will also likely forgo.

I too am indifferent about meat. I will eat it but not as often as friend wife seems to select for dinner.
I am big on vegetables, mostly raw salads for most of them. When not on a veggie kick, fruits and nuts are the go to choice.

My downfall is bread, staff of life some say.  I want French, Italian, Turkish types. American soft white bread has not been in my house for years. I cannot always find good crusty breads in the markets, so I bake my own.  Took me a while to learn some of the tricks about bread making. Bread baking is as much art as it is science. I understand some of the science but the art part, I have yet to perfect.

I bought some t-bone steaks at a local store today. They looked pretty good, and were reasonably priced. I bought mushrooms and asparagus at CostCo yesterday. Grilled the steaks, sauteed the mushrooms, and the wife cooked the asparagus. Best dinner in a while! Yummay!

when i worked a tabe in the big city farmers market, there was an artisan bakery next door. they cosed at 5 but had to keep the shelves full or people would sto p buying the bread
so at the end of the day i would get one or two of those thirty dozen egg boxes full of fresh european french, sourdough, itaian,  and getman style breads. great stuff. i would take it to meeting the next day.


plus i would get the last pizzas from the other lace and either eat tjem or give tjem to the homeless people

Looking forward to Friday...  I visit some friends for dinner on Fridays, next Friday I'll be picking up some thick-cut mid-loin lamb chops from a great little butcher on the way to my friends.  We'll roast them and serve with some roasted potatoes & carrots, roast garlic cloves, green peas and homemade gravy with brown shallots.  We do this every few weeks and it is fabulous!
